Let's talk about something most coffee brands gloss over: the chemistry in your cup and why it matters for how your body feels.
We're a small, family-run roastery in Sonoma County. We grow up surrounded by food and wine culture here — people care about what goes in their bodies, and they ask good questions. One of the most common ones we hear: "I love coffee, but coffee doesn't love me back. What do I do?"
Usually, the answer is acidity. Here's what's going on.
The pH reality
You've probably heard the word "acidity" used two different ways when it comes to coffee. Specialty coffee folks use it as a flavor term — bright, citrusy, lively. That's fine, but it's not what we're talking about here.
We're talking about pH. The scale runs from 0 to 14. Pure water is 7 (neutral). Anything below 7 is acidic. Most commercial coffees come in around pH 4.5 to 5 — about as acidic as tomato juice, and meaningfully lower than your stomach would prefer on an empty morning.
For most people, this isn't a big deal. But for anyone dealing with acid reflux, GERD, a sensitive gut, or a history of gastric surgery, that pH gap adds up over time — and over multiple cups a day, it really adds up.
Low acid coffee — roasted and processed to land closer to pH 6 — makes a real, measurable difference for a lot of people.
What makes coffee acidic in the first place
The main culprits are chlorogenic acids. These compounds are naturally present in coffee beans, and they're the primary reason brewed coffee sits in that 4.5–5 pH range. They're not dangerous — they're actually antioxidants — but they're also the main driver of stomach irritation in sensitive drinkers.
Then there's caffeine, which is mildly acidic on its own. More importantly, caffeine can trigger the lower esophageal sphincter to relax, which can let stomach acid creep back up — especially if you're lying down or eating late. For heartburn-prone people, it's a double hit: the acidity of the coffee plus caffeine's independent reflux-triggering effect.
This is why decaf low acid coffee is often the most effective option for people with real sensitivity. You're addressing both problems at once.
What about workarounds?
People try. Cold brew is the most talked-about one — and yes, it does lower acidity compared to hot brew, but the difference is smaller than most people think, and you lose some of the antioxidant content that makes coffee worth drinking for health reasons in the first place.
Adding milk or cream buffers acidity a bit. Drinking less coffee obviously helps. But if you want a real cup — not a heavily diluted latte — these are compromises, not solutions.
The most effective approach is starting with beans that are lower in acid from the beginning. That's a sourcing and roasting decision, not a brewing trick.

Darker roasts naturally contain less chlorogenic acid than light roasts, because more of those compounds break down during the longer roast. The honest bottom line
If a doctor told you to cut coffee, it's worth asking specifically whether low acid organic coffee changes the calculus. A lot of blanket "no coffee" advice is based on standard commercial coffee, which is a different product than what we make.
